A versatile muffin mix, which produces soft, moist muffins with good keeping qualities.
Basic Recipe

Vegetable oil | 0.280kg | 1.400kg |
Fresh eggs | 0.350kg | 1.750kg |
Water (variable) | 0.225L | 1.125L |
Method
Step 1
Place eggs, water, oil and Muffin Mix into a mixing bowl fitted with a paddle.
Step 2
Mix for 1 minute on speed 1. Scrape down.
Step 3
Mix for 4 minutes on speed 2.
Step 4
Make into different varieties and drop into muffin cups at desired weight.
(Small ≈60 g Texas ≈120 g)
Step 5
Bake at 180°C until cooked.
